- 1 Grated carrot
- 1 cup green peas
- 1/2 cup sweet corn
- 4-5 beans
- 1 beetroot- optional
- 2-3 fresh coriander stem and leaves

- 1 tsp Turmeric powder
- 1 tsp Chilli powder
- 1 tsp ginger paste
- 1 tsp Jeera / Cumin powder
- 1 tsp Dhaniya / Coriander powder
- 1/2 tsp dry mango powder - optional
- 1 tsp Garam masala
- as per taste Salt,
- 4 tsp oil / ghee - to Grease pan
Steps to make to make Vegetable Cutlet
- Wash the potatoes and cook well in a pressure cooker

- While the potatoes are cooking, wash all the other veggies, peel, and chop / grate finely. We can add any veggies of our choice. I used carrots, corn, boiled chana, Green peas and cabbage.

- Steam cook all these veggies for about 8 to 10 minutes
- Take a large bowl, add all these veggies, and the potatoes, and cool them. Then mash them all well.


- Now add finely chopped fresh coriander leaves, salt and all other masala powders, and mix well


- Make balls of this mix, and flatten it, coat with bread crumbs. Heat the skillet / pan, Grease with oil and shallow fry in the hot pan. Cook 3 to 4 minutes in medium heat on both sides. If required, add a little bit of oil or ghee to grease the pan.


- Alternatively, we can deep fry in oil, or use air fryer to cook it. It can be had with tomato sauce or green chutney.
We can also use this in a burger bun with a slice of cheese, and lettuce, or simply toast bread and have a tasty bread cutlet.
