- .Firstly, take a large kadai. Heat 2 tbsp of ghee and add 1 bay leaf, 4 cloves, 2 pods of crushed cardamom and 1 inch of cinnamon.Saute the spices till you get a nice aroma.
- Now, add the dried and soaked Basmati Rice in kadai and saute till you get a nice aroma.Keep them aside.
- Take the same kadai. Add oil in the kadai and add sliced onions, finely chopped green chillies and add little quantity of salt. Saute well till the onions turns translucent.
- Now, add
1 cup of finely chopped beetroot,1/4 cup of grated beetroot and 1/2 cup of green peas. Then
add turmeric powder, required amount of salt. Saute until the raw smell of the vegetables goes off. - Now add the basmati rice which was kept aside in the same kadai along with the sauted spices and add 2 1/2 cups of water and mix them well. Add salt only if required.
- Cover and simmer for 20 minutes or till the rice get cooked completely.Keep checking intermittently to ensure that the rice is not overcooked.
- Once the pulao is cooked,
garnish it with finely chopped coriander and mix well. - Finally, beetroot pulao is ready to be served with either raita or pickles of your choice.
